Default Mobile Oven

If one were to install an oven into a truck or onto a trailer which would be the better way to go. Precast refractory or brick oven. Which would cope with the movement from transportation etc. Thank you

Most successful mobile ovens use modular ovens, there are fewer pieces to vibrate apart, and the modules are more self-supporting.

I thought pre cast as well but I have noticed that every mobile pizza truck I have ever seen in France uses brick ovens?

More safety margin with a modular /pre-cast oven.

We've been entertaing the thought of a mobile oven, as well, for fundraising and farmers' markets and stuff like that.
But we have to get the stationary one going and the experience of using it, down first. But I'd love to see ideas of people who are or have done mobile ones...

In the French trucks, we generally find pre-assembled Grand-Mere, Panyol,... wood-fired ovens.
I am french and starting the same project. I am going to build a refractory concrete oven on my trailer.
Good luck!
