Default Gas assisted oven

Has anyone built into their oven a gas assist to keep the temp without using wood, mainly for bread baking?

If you have what are the pros and cons for doing this?

thanks
David

The big "con" is that gas can accumulate in the dome and create a disaster upon ignition. Professional pizza ovens have serious (and expensive) safety controls. Gas isn't recommended for home brick ovens.

FB recommends strong against using gas in a residential oven. Commercial gas ovens not only have sophisticated controls and shut-offs, they are managed by professional in a professional setting.

Here is short document we have put together.

Thanks for the information, I was wondering, as I also use gas assist for my trailer mounted smoker, I have to keep an eye on it at all times.

I'll work on a wood only oven.

thanks
David
