Default Fire Chamber

I am planning on building an oven primarily for baking bread. The ovens I saw in Egypt had a separate fire chamber under the oven floor. This chamber vented into the baking chamber and out the chimney. I rarely see this design used in the US and was wondering if anyone could explain any pitfalls.
