Default Igloo design questions

I'm new at this. I'm planning to build an oven that will accommodate baking bread - maybe 50 - 100 loaves per week for a small bakery.

The igloo design from the Pompeii Oven Instructions looks promising - less skilled labor involved and maybe less expensive than some other options.

What I don't know is how the "oven dome" is built. Is it part of a kit? Or can one build the dome with other materials?
