Default thermal coupler

Hey everyone, first post ! Awsome site, Great People, Great Advise ! Anyone know where to get thermal coupler, thermostat, weatherproof readout. where does it go, would like one in floor, one in wall. We have a restaurant here called Carabas that has a wood fired pizza oven, that has a nice digital read out, but there not talking.

The people at Carrabba's aren't talking because they probably have no idea where the thermalcouple is located or how it works (I also asked at our local Carrabba's ).
