Les, why don't you contact Mary Karlin and see what she says. Who is running the oven, how experienced they are, etc. Sometimes for our more experience wood-fired chefs, you need to know that the instruction is really good in order to learn some new things and have a good time.

Let us know what you find out.

I know that Mary has recently finished her book on wood-fired cooking, and it will be good to see how involved she is with Ramekins going forward.

After what I did to the chicken and ciabatta bread - an ape running the oven could give me tips

Mary will be teaching the class. They told me her book will be out in spring, I'll probably get a copy while I am there.
