Hello all, we are in the process of building a wood fired oven. We purchased a modular kit (casa 90) and it's on it's way. We are so excited! It will be a mobile pizza oven which we will take to local farmers markets etc... I am a recent culinary school graduate, and last year our class visited Woodstone Ovens in Bellingham WA - they make these ovens, which range from small to very large, for restaurants. They make wood fired ovens, but most of them are gas fired now. We were able to experiment with all sorts of foods and dishes, and had a sort of iron chef competition. It was amazing, and it sold me on cooking in these ovens. I still have a lot of questions though, and that's why I joined this forum...
