| I would like my guests to be able to build their own pies but I am concerned about the sticking pizza problem. Does anyone have experience with Perforated Pizza Disks ![]() To allow guests to build a pizza on the disk, throw the whole thing in the oven and then move the pizza off the disk after the bottom has set. | Chip, Our guests make their own but we have them use a ton of corn meal on the peel. We also try to keep them moving to prevent the dough from hydrating into the peel. Where are these sold, I might give one a try?

| I do that all the time and I don't think you will have any problems at all doing it that way. I make a sourdough crust so I like it to set for a while after I stretch it out. |

| Les, I use an air bake pan and you can find them at Target and Wall-Mart and such. |

| Les, I found them at Pizza Supplies They have a lot of other stuff. the thing I like about these is that they have no rim so easy on and off for the pie. Chip |

| We get our guests to build the pizza on a tray/pan, oil the pan, spread dough, flip dough, build pizza. Bake until the dough is firm, remove from tray and put on bricks to crisp, we rarely get a problem.

| we use the wire mesh screens when we do big parties (50 pizzas) and they work great |

| we take the pizzas off as soon as they cook enough to slide off. we have used them for over 300 pizzas so far and they look as good as new. |
