| Ingredients: Potatoes, garlic, onion, butter, olive oil, cream, cheese……salt and pepper to taste. This is a very rich but tasty accompaniment. Takes about the same time as a roast lamb or chicken at 1 ˝ hours cook time. Kind of an au gratin variation. Slice up potatoes into thin slices. Butter a dish. Place in layers of potatoes, thin sliced garlic and onions, grated cheese (swiss, but can also use some cheddar and parmesan if desired), salt and pepper to taste, more potatoes, butter shavings, etc.….repeat until you run out of potatoes but don’t exceed your dish volume. When finished pour some olive oil over the potatoes, pour in some cream and top with cheese. (I think a cup of cream for this big dish) More or less of whatever you like…. Start with the dish covered with foil but take off later to brown the top of the dish.
