Default Do I need doors?

Beginner here- do I need doors in Georgia? planning on making bread and pizza. thanks!

For pizza, no. Fire in the oven cooking is done wide open. Bread baking is done with retained heat, after the fire is removed. For this you need a door in the inner opening, inside of the flue. It can be quite simple, a piece of refractory insulation board cut to fit into the hole, covered with sheet metal if you are getting fancy.

Sounds right to me.

You will want a door for roasting and bread baking. How sophisticated you make it is up to you. The Casa/Artigiano ovens have free standing metal doors with a wood handle, where the Premio ovens have an insulated and hinged door, with a thermometer and peep hole.
