| Hey all, Can anyone give me a list of producers in Italy that make fior di latte (fresh mozzarella) and provola (smoked mozzarella). Thanks |

| No, but if you are that serious you may want to consider making the mozzarella yourself. I have made it several times and although there is a trick to it, it can be learned, and best of all, without too much "gear". I have had trouble finding any water buffalo to milk however.....I stick with cow's milk. ha |

| There are a couple of domestic producers of mozzarella di bufala. Here is one of them, they also have smoked mozzarella. I have not purchased from them so I have no idea of the taste or quality. Bubalus real Mozzarella Cheese RT |
