I have updated the old Cooking Techniques page, added more content and added links to other technique pages (including Jim's Making Steam page). Take a look and let me know what you think. I am always happy to add more detail, or new pages on other techniques.

I can also make this into a PDF if anyone wants to print it, or email it around. Let me know.
