Default Confused

Hi,

Am new at this, and would appreciate some help!

Just set up my wood fired oven and am in the process of firing it up. Have some questions:

1. Is it just me, or is lighting a fire difficult? For some reason, I can't seem to get my larger wood pieces to burn. Maybe the wood is too hard...? Can I use lighter fluid to help?

2. After the firing up process when I really start using the oven (I plan on putting up a pizzeria), do I need to keep the fire going overnight as well? Or do I just let the fire die out before I go for the night - just a bit nervous about leaving a fire on in an oven overnight when nobody is there to monitor it.

3. What's the ideal temperature to maintain for a pizza oven?
