Hi Im new to this, and we want to turn a brick BBq with a big steel plate into a wood oven. ? 1 what dimension does it need to be particularly depth. 2. We have plent of brick to make it even dble brick does it have to be rendereded or are bricks insulation enough. Any help to get started would be very appreciated. My husband is italian and sort of remebers the ones in italy were just brick.

Insulation is all important, around the dome, and under the floor. Your oven won't work without it.
