We did the Sea Bass recipe again (do you go back to the same restaurants and order the same dish?), but this time I used cod. Very nice again, and I learned a few things. It's still highly recommended.
1. I over-browned the vegetables, beyond sweating them, and it didn't help the dish. We didn't have celery, which I think adds to the dish, and will use it next time.
2. I replaced diced tomatoes with diced red peppers, which worked. We didn't have spring onions or chives, which I would make sure I have next time.
