| Hello, I'm looking to purchase a gas/wood commercial oven for our restaurant. Pizza will be the main event. I also would like to use the residual heat to bake bread. I use the Tartine method with a cast iron dutch oven to get the steam effect. My question is can the FB ovens be sealed to create steam in the baking process? |
