Default My First Good Bread in the WFO

I am still curing my oven, and am nearing the end.

I hastily tried twice to cook bread in the oven with poor results prior to today.

Today's sourdough:

The bread is made from a sourdough-poolish using left over yeast after brewing a batch of beer.
