Default First Bread of 2011

Here is some bread from the first fire of 2011 in Illinois. It's from Hamelman's Country Bread recipe. Only change is I fermented the Biga longer at lower temps. Outstanding bread recipe. I also baked some pretzel loaves and rye loaves, too.
