Smile Kids visited Philippines, first Pizza Party!!!

The kids and grandkid were here to visit for 2 weeks and had a grand time with the WFO. We had a party with approximately 150 people, DJ, Karaoke (of course) and PIZZA among lots of other Filippino delights..... Lechon (Whole roasted pig with crunchy skin), Caldereta (tomato based stew made with goat meat or beef), Laing - a spinach like leafy vegetable sauteed in coconut milk and hot peppers, very spicy, ect, ect. If you know Filipinos, they love a party and eat....hundreds of dishes which not all I choose to eat Haha the food here can get pretty....let's say....exotic. My palate has changed since I moved here from the states and I am more and more able to eat most of the food here.

Anyway, we made 15 pizzas ranging from pepperoni to anchovy/bell pepper/green olive, smoked oysters and white asparagus (yum), 3 cheese with locally made soft white cheese and I can't remember the rest. The WFO performed without a hitch. I was able to easily get 3 pizzas in the oven at one time (60" oven), tried 4 but it was too much for me to handle at once. I need a peel with a longer handle. Still cooking the pizzas in pans but that's ok for now. Got the oven up to well over 750F and kept it there for a couple of hours. Also baked a cherry cobbler after the pizzas but the oven was too hot still and it got a little crispy. It was still good. That's me in the green t-shirt looking worn out but very happy and content.:

Hi lwood,
with around 150 visitors and only "15 pizzas", you got out of it lightly! I would have thought that being something different to their culture and diet, that you would have needed heaps more.
Getting them assembled and baked in a short time really sorts you out.
Anyway, the look wonderful.

Yes 15 was all I wanted to handle that night. We had lots of other food, the Pizzas were just an appetizer. And I got to party a little. As you can see the kitchen was pretty much thrown together just before the party. Just finished the bar the day before, still unfinished plywood counter tops and a little disorganized. Once the kitchen is up and running and I've had a little more practice, things will be a lot easier. Yes, getting them assembled and baked can really "sort you out" as you can see in the pic.

Yeah, Filipinos are great for a party and always lots of food. I'm going to try a local favorite "Laing Pizza", somewhat like a creamy cooked spinach only hot and spicy. Laing is a large leafy "taro" type plant, which is dried then cooked in coconut milk and hot peppers (help me out here Raffy) That with a bechamel sauce and local white soft cheese (like queso fresco). Lastly, dribbled with a little bagoong (shrimp paste). Maybe a few shrimp scattered around. I'm making myself hungry already, better go fire-up the WFO.

Hi there lwood. My favorite Filipino pizza uses kesong puti (white cheese, best made with goat's milk) and longganisa (pork sausage usually served for breakfast). Put them on a naked (sauceless) crust and cook in your WFO until the cheese melts. If you get the sweet variety of the sausage you get a nice sweet salty combination. Its best to fry the sausage first (in your oven with a cast iron skillet works really well) since it is pork based. Crumble the sausage while frying.

Where in the Philippines are you based? I haven't encountered many WFO fans and I'd be interested to trade tips and recipes. I stay in the Makati area.

Hi Rico, there are a few of us WFO here in RP. Raffy is right there in Manila. We are in Naga, Cam Sur. There are others also. I will have to try the kesong puti and longganisa pizza. You might try the Laing pizza, it was great.
