Question Dome to Hearth Ratio's

I'd be curious to find out the range of Dome to Hearth Ratio's out there....

James, did you measure the one's in Pompeii? I'll measure the big oven I found at Sagunt Castle when I get back there to get pictures.

Measure your dome height by your hearth diameter...

Mine is .46 (a 46cm high dome / 100 cm diameter hearth)

Reading the FB Pompeii plan ratios I came up with:

.37 to .40 for the low vaults and

.48 to .53 for the high vaults.

So the Sagunto Castle oven comes in with a dome ration of 75 to 500 or so...

...0.15 ratio ...now that's a low dome...and not used for pizza's!

Jim,

I wish I had measured the ancient Pompeii ovens -- but alas, I didn't. Darn. I can definitely say that they were very high. You could almost stand up inside the bigger ones.
