Default Whole Roast Chickens

After the pizzas and bread we put in a couple of whole chickens.

Recipe:

Two whole chickens cleaned.
Rub inside and outside with olive oil.
Salt and pepper inside.
Put in whole pierced lemon, thyme and rosemary branches.

Optional to put some oiled vegetables around outside of chickens (can be added 1/2 way through cooking as well)

(One trick is to roll your lemons on the counter before piercing with knife to get better release of fluids)

Baked for 2 to 2 1/2 hours in a slow oven. When done, we took out and covered with foil and towels to let it cool.

Great hot or cold!

Default Roast Chicken Delivery

Here is the chicken being delivered to a friend in need...meals on wheels...he took the picture so I pass it on.

Default Morning Chickens

Woke up this morning and the oven was 350 degrees after pizza last night. Started a small fire and roasted a couple of chickens.....only for an hour and a half. Toasted a few almonds too....

We usually do a couple of oven chickens when we get the chance...and save for later use....picnics or soup!

One of these was delivered for a shut in....the other is going to take pictures of the Sagunto Castle oven Friday as a picnic guest.
