What type metal for door?
 
Hello gang,
I'm rebuilding my door which I built four years ago of wood. I had it backed with thin sheet metal but that was just a stop-gap, temporary thing. Back then I bought two rough-cut oak 2x4s; one for immediate use and the other because they were green and I knew the wood would dry and shrink. So now it's time to use the dried wood and make the permanent door. This time I want to back it with whatever metal is used for the metal doors I see on ovens on this site.

I don't know squat about metal. I plan on going to a local metal-works business and have the piece made. Is there anything I need to know about metal type? What should I get? It's really only to be a backing for the wood door. So it can be as light as possible; doesn't have to be the door itself. Just a barrier so I don't cook the door along with the sourdough.

Stainless. But the metal panel will char the door if it is directly attached.

You can use aluminum as well, pretty easy stuff to work with. You will have the same problem, it will smoke the wood.

I know normal plate steel is hardly ever (maybe never ?) used but why not if I may ask ? Sure, it can rust, but it can be painted so that should not be the problem.

What would be the problem with normal steel ?

None - harder to cut, still going to smoke the wood. You may minimize the problem by putting the metal on standoffs. Why not just build a metal door?

Nothing. But it's like anything, there are pros and cons. I would choose based on what I could get....I had free stainless, so I that's what I used.

Personally, I would list metal options this way

1. Stainless Steel
2. Copper
3. Aluminum
4. Carbon Steel

I'm not disagreaing with the other posts. Just answering a specific question. I would not paint the portion of the carbon steel that faces the interior of the oven. I would just cure it with pam, bacon fat etc. The choice is yours.

Just sayin'

I had one made of stainless, with 3" of ceramic blanket inside. The hole will be made smaller for my 8" thermometer

All food for thought. Charring the door probably won't bother me much. The door I have now is slightly charred and it really wasn't protected well and it's four years old. Mind you, it's never in place when there's a fire in there. It's only used for breads & roasting and the like. Never with pizza.

As for why not just use a metal door, simple. I don't want to. I like the aesthetics of wood. I sure don't see many others like it (not none. Just not many). And as I am a bit of a mule in my stubbornness, I'd rather go for what I want than accept that I can't have what I want. I built the oven in the first place because I could not find the pizza I wanted. What I remember having as a kid when I lived in Naples (1960 - 1963). So for me it's a small concession to have a charred door - even if I have to replace if in another other five years.

Just sayin', if you have to pay for the material then carbon steel looks pretty good. Also if you want to weld your door, it's the easiest to work with.

FWIW, I used high temp paint on the inside of a carbon steel door and have had no problems. It doesn't chip off or anything like that. I wouldn't paint my carbon steel pans, and I wouldn't bother seasoning my door :)
