| James I agree with you 110 % Your readers need all the info they can get. FRI I installed three in your ovens, over the last 4 years. and even after explaining all the points. FYI the last one was over 2 years ago. |

| James I agree with you 100% but don't forget about propane, under the oven as I believe it is lighter than air and would lay in the bottom. Either way a Wood Fired oven is just that a WOOD FIRED OVEN. I believe the only added gas to the commerical units is because they can't be bothered with the wood. Most commerical Ovens just use the gas. They might as well use a gas deck oven or toaster oven |
