Question new and confused

hello, i should say dased and confused, that is to mean that the more i find out about ovens the more i need one, but the less i know. i need one for my life dream, witch is to have a cafe the has the best of . ive been working on this for ten years. to date the building has been restored,1905 storefront, the dining room, baths are done,kitchen to code,easy here in iowa. but didnt have the right idea. the oven is the right idea. so i can get the materials brick and limestone. i can seat 45 and think would like to be able to make 100 per hr. anyway this is a little about me. i live in sabula iowa google for picture its a river town.

Hi, Tom, Welcome

There are a lot of folks here to share about building and cooking in brick ovens. There are fewer commercial resturant ovens than the backyard variety, but we welcome all questions.

It's said that it is better to ask a dumb question than to make a dumb mistake.
