They're not joined, just dry butted together. Staggering won't make it any stronger.... Probably would look better though

The more I think about actually doing it- the less it appeals to me.

I have some spare bricks. I think I will grind it first, and if I still not happy, I'll cut it out. But I'll definitely try grinding it first...

So the strength will be dependent on the concrete cladding over the top, if the vaults are not in bond? Staggered joints certainly would make it stronger.
I'm sure it won't fall down, many kilns are built with dry stacked bricks and operate ok, but the cladding over the top is likely to exceed 300C so the Portland is likely to pack it in. Thick reo also expands more than the surrounding refractory when heated fast, further weakening the cladding layer. I'm not trying to tell you it won't work, I'm sure it will, but you have a few design features that seem to me to be contrary to some established principles.When others see your beautiful finished oven they will want to follow your build.

The cladding concrete recipe uses just as much lime as cement, and this acts at the binder once the cement burns out- same principle as the home brew mortar recipe...

The 4 individual vaults are not joined, but each vault has the bricks mortared with home brew mortar.

It's strong enough to stand on

Yes, I use the same brew, but there is little strength in a lime based concrete, particularly when conductive, hotter steel expands inside the cladding layer.

Yes- but it's non-structural it only has to support itself...
