Mine made that whining noise on #2. Next to the lowest. I mix the dough and water on 1, wait 20 minutes, then mix on #2.

Mine no longer likes to shut off thanks to so much dough making...have to unplug it so that it doesn't eat my hand when I try to remove the bowl and dough hook...scary sometimes when I forget...it ate a spatula that way once...spent 20 minutes making sure all the splinters were out of the dough
