Both of these videos show the hand kneading and shaping of these very high hydration breads..
The first shows Craig Ponsford making whole wheat cibatta at just under 95% hydration..
The second is from San Francisco Baking Institute, SFBI, making type 70 hearth breads and this dough is just under 90%.
