| Here are a couple of fun photos from the warehouse at the Modena commercial oven producer. They have been growing quickly over the past 5 years, and are still taking market share from competitiors in Italy. It was like being in the "pizza oven store" with all of the pieces and stands stacked up ready to make the next oven. The warehouse has lots of things you would recognize, including Insulfrax and Calcium Silicate insulating blocks. They say they upgrade the insulation they use every few months, as the technology keeps getting better. They make their own proprietary refractory, and are also constantly tuning that material as well. The producer supports of professional pizzaiolo school on-site, and I will post photos of that next.
