brick oven with GAS..Plz Help..
 
Hi

I am huge fan of forno bravo.
I am planning to open a pizza Outlet and want to build my brick oven with GAS option as wood firing would be an issue here.
So can you Please help me getting some technical information for building gas fired brick oven. I have gone through the Pompeii free plan to build the oven. would that work with gas option om commercial level and the other thing which I am worried about is the Durability of the oven.
I don't have the budget to buy the FB commercial Modena series that's why I am planning to build one on my own.

If wood is not an option for you, how about charcoal. Have you ever been to a restaurant that cooks witth charcoal in a grill? It could work in a brick oven. I use wood mostly, but I have used charcoal too and it worked for me.
