Those cables are thermocouples, K style..buried at different point on the dome and 3 different depths, shallow(closest to fire) heat, mid brick heat and just under the perlcrete insulation to read "deep" heat.

Who is the lucky person who gets to crawl inside the oven to clean up the mortar once you have removed the form?

564 full brick, 350 of which were newer brick, the rest were larger, old stock 10 inch bricks, 104 half bricks. The dome is now parged to a full 10 inch thick thermal mass.
