Sizzling Lettuce

We used to get this dish in Cordoba....a long time ago at a restaurant called La Lechuga (the lettuce).

Cut a head of fresh lettuce into wedges. (The long heads of bib lettuce work but we have done it with others too.)

Heat up some olive oil (very hot), add some sliced or minced garlic and pour over the lettuce. Salt and pepper to your tastes.

If the lettuce is sizzling, the oil is hot enough!

Something different to try.
