PINEAPPLE AND PEAR LIQUOR DESSERT TOPPING

1 pineapple diced
1/4 cup demerera sugar
1 tsp cinnimon
1/4 tsp vanilla (or 1 vanilla bean seeded)
1/2 cup golden pear liquor
2 tbls butter

Method:

Mix all ingredients well and put in a dish, cook on a cooler oven perhaps when its winding down cause the sugars will carmelize and then burn. You want some color on the pineapple. Serve on homemade ice cream! MMM MMM GOOD!!!

Dessert pizza

Spread a mixture of butter and brown sugar on the dough (not too much, thin layer)
Spread thinly sliced apples that were tossed in vanilla on top and bake.
This is just heavenly!!!

Remove stalks from cup mushrooms and dice with a little chopped onion, goats cheese and basil. Spoon this mixture back into the mushrooms and roast in the oven until they look irresistible.
