Greetings from Illinois
I just found this forum while surfing looking for some information for building a new oven, and rebuilding the oven I have had for 6 years.
We are a small artisan bakery we created to be part of a vocational program (long story that can wait for another post of its own) and I've been mostly self taught, so I'm looking forward to interacting with a group of like minded people who can answer some of the things I haven't been able to figure out!
