Default Re: Argentine "mud" oven

dmun suggested putting the vent in front of the oven instead of the chamber. It should be noted that the Argentine oven is different in type than the Italian pizza oven. It is also different in purpose. The purpose of the vent in the chamber is to significantly lower the temperature of the oven while a small smoky fire burns. This style of oven allows for better temperatures in the 200 degree range and a different flavor to meats and sausages. And you can do pizzas in it. Los Argentinos son sabios con sus carnes.
