But you are right about the flour. The Caputo performs so much better in the high heat environment.

When I use the standard bread flour, it still makes a good product, BUT... I usually cook a bit cooler than most around here. A 3 or 4 minute pie works for me, and I think my kids prefer it to the charring. They also like loads of cheese and toppings, so the cooler oven works better for this purpose.

But for authentic pizza, Caputo and a HOT HOT oven is the way to go.

* Here in Oz we've recently suffered all the Crap associated with a Federal election. (At least we got it right, this time.) To be fed hourly crumbs re America's bun-fight is akin to water-boarding.

Default where did the vids go??

I guess I'm late to the party!

I'm finishing up my WFO, and learning to get better at handling dough.

Any update links? the links to 'dave's videos' lead to nowhere now. I went to the root of his picasa acct, and no pizza shaping vids seen.

suggestions?
