The Duck Corral...pretty authentic Spanish

This is a family favorite for three generations.....located just off the road between Valencia and Alicante in the town of Gata.

When it opened people would come in and ask for the duck...but they did not serve it! After a number of years of this the owner finally found a recipe she could live with so now you can order it ahead of time. It's a roast duck in fruit sauce and one ration is 1/2 a duck.

I posted photos of the ovens under the commercial oven site....

.....but I also snuck a picture of the roast duck in the kitchen....here are three ducks, accompanied by pears (in the background is lamb shank)

with a litre of local wine......
