Thai Style Chicken with Coriander and Chilli
Prepared this dish for lunch today in the WFO. I basically made a Thai paste with lemon grass, coriander, ginger, roasted capsicums, olive oil, fish sauce, soya sauce, tomato paste - blended and applied as a marinade to the chicken.
Served with potato wedges and roasted pumpkin.
