We did three chickens before the pizzas this week and I was struck by the smoky flavor. We stripped the meat to use in a pot pie and for a curried chicken salad, then we boiled the bones for caldo (stock) for paella.
The smoke flavor hits you every time you open the fridge!
I need to try some orange wood too.
