Pumpkin/potato au gratin
This came out wonderful....
in an oiled cast iron skillet layer in
thin sliced potatoes
thin sliced yellow onion
twigs of fresh rosemary
crushed mixed peppercorns
shaved parmesan reggiano
drizzles of extra virgin olive oil
put iron lid on pan and baked for about 20 minutes then remove lid and finish by putting diced tomatoes and very finely sliced red onion on top with more parm and slide in over for another 7 minutes
remove and cool for 5 minutes and serve!!
