Looking very nice. I am curious when you put the Prime Tri Tip in. At what time during the fiering (I mean to ask, how hot was the oven roughly at that time, was it allready at pizza temp or was it just after you started firing it up ?) and how long did you have it in ?

Thanks alot guys. The tri tip was put at the entrance as the inside of the dome was too hot, im not sure how hot but it was during the fire up stages, the dome had not cleared yet, at the entrance it was about 300f. The meat can always be moved around closer to the entrance if its too hot. I probably had it in there for no more than 30 minutes

What weekend was this?

I vote for making it an official Forno Bravo Holiday called The Days of V-Wiz! If not a holiday, an annual festival. What a feast!

I'm about to try David Chang's Pork Butt recipe for Bo Ssam. I can't wait to see how that comes out in the WFO!

Beautiful images. An aspect of cooking that isnt discussed much here,,, documenting it with Photography! There is alot of interesting light going on in a WFO for sure.

Excellent food and great documentation. I was interested to see the price of the pork - $2.19/lb. be difficult to find sausage meat here for that price!

Good to see the full potential of an oven being used.
