Ken's Monday Morning Pot Roast
 
Saturday night was pizza night.
Sunday morning, a leisurely bread bake (I baked some scones).

But what to do for dinner on a busy Monday night? There is still retained heat in there, so use it! On Monday mornings, my oven is a balmy 280 degrees. Perfect "Crock Pot" slow-cook temperature.

Use a dutch oven, or any oven-safe covered pot/dish
  • 3 to 5 pound beef chuck roast
  • 1 bottle of beer (you saved a bottle from Saturday night, right??)
  • 2 envelopes onion soup mix
  • garlic powder to taste
  • pepper to taste
  • NO salt (the soup is loaded with it)
  • 2 or 3 tablespoons Worcestershire sauce
  • small bag of baby potatoes
  • handful of baby carrots
...and here's the best part:
  • All the left over veggies you cut up for pizza toppings on Saturday night:
onions, peppers, mushrooms; whatever you have. Throw them all in.

Pop it into the oven after you send the kids off to school and forget about it until time for the evening meal (7 hours or so).

oh, wow! That sounds good. Do you have any recipes using pork like this? Any part of the piggy- I have a line on getting a possible half pig. Well, a real half pig, possibly. Geez. not enough coffee this morning.

Barbecue is always good, but I was thinking that another variation would be nice to have in reserve..

BTW, this recipe would be good with venison if anyone has it.

Pulled pork barbecue with a shoulder (Boston Butt) is a breeze.

I've done marinated tenderloins at higher temps (300's F / 150C or higher). They always turn out well. You can throw veggies in those, too.
