How many of you have ever eaten fondue? I was going to describe it but this is better:

(...in which among other things, we learn that America discovered Switzerland in the 1960s...)


Great stuff, specially when washed down with copious amounts of Kirsch - for the digestion you know. (That's my story and I'm sticking to it ;))

Fondue is coming back around here. It was hugely popular in the '70s and '80s, became declasse afterwards, but is now my (almost 22 year old) daughter's favorite social meal with friends.

Frances, a related question: is raclette (Raclette - Wikipedia, the free encyclopedia) as prevelant in Switzerland as the cheese marketing board here would have us believe?

We love fondue around here.
There are three basic ones: meat, cheese or chocolate fondue.
On meat one is used hot oil in the fondue pan where different meats are slighty fried. Side plates are used as condiment (maionaisse, herbs and even cheese)
Cheese one is as in the picture above, where different bread types are used to 'pick up' the cheese.
And the one for all loved, melted chocolate (with some liquor...mmmm) in the pan and fruits (strawberry, bannana, melon...) to try it.

There was a huge fondue craze in the 70's. The burnt orange enamel fondue pot was such a popular wedding present that it became a cliche: I thought about getting friends who were having a commitment ceremony one as a joke:

I'd appreciate your recipe Frances and tips on making it. I had a recipe from a Swiss friend of my parents but was unable to make it happen. We used Gruyere and Ementhal but ended up with a lumpy fondue....so have not tried it again....we have recently been talking about trying it again this spring.

Hmmm, maybe I needed to drink more Kirsch.....

Haha, I use the stuff out of the packet!! :D

Sorry to disapoint you all...

Its a very well chosen packet though. Some premade ones are pretty awful, but I like Gerber Fondue moitie moitie, with plenty of added garlic, pepper and some nutmeg. And Kirsch, did I mention that?
