Baked Chicken & Rice
Tried the Baked Rice again using chicken drumsticks. Very tasty with the soup stock/caldo at a 3:1 ratio with the rice. I am going to try cooking it less time for more texture in the rice.....It looked like a bit of a sticky mass but broke up fine the next day.
This dish reheated very well in a slow oven. ( I try to avoid microwaves if I can). If it's too dry I add a little white wine!
It's still not Paella though!
