Flue outside of the door concentrates the heat inside.

In order to be assured of the right amount of heat retained in the oven, the oven door height needs to be 63% of the oven dome height (in your case, the barrel height). Understand this point before you proceed further!!

Here's a neat little solution for a chimney/flue position. Saw quite a few of these on our travels through France and Italy. This one is in Chinon castle France.

Here's another one in Panzano, Tuscany, Italy. We had lunch at this place, which is a 500 year old villa. I guess the oven is the same age.The meal was beautiful, we found the food much better in small towns. I had truffled rabbit from memory.
