| In order to be assured of the right amount of heat retained in the oven, the oven door height needs to be 63% of the oven dome height (in your case, the barrel height). Understand this point before you proceed further!! ![]() These pictures show where to put the vent. | Here's a neat little solution for a chimney/flue position. Saw quite a few of these on our travels through France and Italy. This one is in Chinon castle France. |

| Here's another one in Panzano, Tuscany, Italy. We had lunch at this place, which is a 500 year old villa. I guess the oven is the same age.The meal was beautiful, we found the food much better in small towns. I had truffled rabbit from memory. |
