Indoor Pompeii is lacking air circulation
 
Hello dear folks,

For my pizzeria I builded a high volt 46" pompeii oven in my kitchen. For heat concerns I made the opening width 20" and the height 13". Probably this would work fine if the oven was outdoors but in my case, its a quiet a hassle getting a decent fire all night. By the smoke production I imagine the problem is a lack of air circulating.

We are thinking of building a 4" tube inside the center of the dome with an elbow up going up untill the end of the chimney (3,2 mtrs) outside.

This is what my welding guy recomended, any thoughts on this ?

What is the ceiling height of the oven?

I would check with your local building code inspector to make sure you are that it is done safely whatever you decide to use.

Smoke in a new oven can be that it's still damp and not cured.
Could be be the wood not seasoned enough as well.

A 42" oven needs an 8" diam flue as min. Also if the oven is new it will be smoky and require at least 10 decent cooking fires to completely dry it.

You will lose all your heat from the oven out through this tube. :eek:

...unless you build an adjustable damper at its base.

Try more fires or a larger diameter flue before cutting a hole in the top of the dome.

An indoor oven will function better then an outdoor oven due to the lack of wind, not worse. If the building housing the oven is modern construction and very air tight it could be an issue of needed more fresh air.
