for some reason my mozzarella cheese has started burning. i have not changed the temperature, location of the pizza, or the brand of the cheese. what could be causing this?

Heat will burn cheese, wood or the earth itself, if it get hot enough! To help you with your problem we need a little more details.

Re: Burning Cheese

thank you for the info. we have been making pizzas with the same cheese and the same heat for over a month now. but all of sudden, with no changes made to the head or the cheese, the cheese started burning.

Maybe the cheese changed its formula and started using powdered milk

Re: Burning Cheese

How is it burning in relation to how the pizza is baking? Does the cheese burn while the crust is doughy, is the other topping cooked or un-cooked. Will moving the pizza back from the fire help, is all of the cheese burning or in spots???????
