I was wondering if anyone has tried making croissants or other delicate pastries in their WFO? I'd love to hear about your experiences, oven temps, steam vs. no steam, etc! Thanks!
Croissants, should be fine in a WFO. I have only done them in the house oven. I would suggest baking them at bread temps and the same way as bread. I would also suggest using a pan under them due to the butter that bakes out. Steam should not be necessary.
