Reduce IDY as batch size increases?
I have Peter Reinhart's Pain Rustic recipe and have calculated the amount of ADY to use for 10 lbs of Flour, about 20X of the original recipe. I understand that less IDY is better to a point and with retard time, more is better to a point. Is this IDY linier to the batch size or?
