OK....I made 3 lbs of dough:
2% Sea Salt
1 Tsp teast
Mix dry ingredients, add water all at once, mix for 1 minute with paddle on Kitchen Aid, and walk away for 10 minutes. Beat for 2-3 minutes with paddle, cover with plastic, and walk away for 6 hours while dough rises. Pour into long floured rising basket and let go for 4 hours. Bake in a 500 degree wood fired oven for 30 minutes.
By the way, the flour was Sam's Club Pizza and Bread Flour. 11.4% protein according to ConAgra.
