Pale color and no oven spring is a near certain overproof. You want to fire sourdough early - usually around half to three quarters doubled. By the time you get to doubled its usually too late.

If bread temp was 208 and the color was pale, the crust should have been dark (unless you baked it at about 325 or less and I doubt that!
